You're taking a single object (a coffee bean) with a limited surface exposed to the air, and smashing it into thousands of tiny pieces, each with its own surface area. This greatly increases the rate of oxidation and causes the coffee to go stale very quickly. Hence, losing flavor and body quicker.⠀⠀⠀⠀⠀⠀⠀⠀⠀
